Low Carb Chicken Recipe




This low carbohydrate chicken recipe is quick and only takes a couple of hours to cook on high with a crock pot! 

Recipe:

*  1 Packet of Taco Seasoning
*  1 Packet of Ranch Season dressing
*  5 Chicken Breast
*  1/2 of water ( may have to add more if water evaporates) 
*  1 Tablespoon Olive Oil


Direction:

Turn crock pot on high. Add Olive oil and thawed chicken in the pot. Mix Taco season and Ranch season in the half of cup of water. Mix until seasoning is diluted. Pour into crock pot. Let chicken cook for 2-3 hours until the meat is easily shredded with a fork! Enjoy!!! 

There are tons of low carb meals that are easy to prepare in the crock pot! More to come! 




Add chicken to romaine lettuce with red onion, cheddar cheese, salsa and a bit of sour cream! Sometimes i'll add some hot sauce for more flavor! Yummy and so good!

Homemade Vinaigrette Dressing




Y'all everyday I put this amazing homemade vinaigrette dressing on my salads, chicken, tomato's and pretty much anything green! Its super healthy and very simple to make!  In the ingredients below you really need to make sure you use Extra Virgin Oil and not to substitute with vegetable oil nor any other extra light olive oils. The E V O makes the dressing taste authentic and delicious! Make sure you comment below how you like the dressing and share with others!

Ingredients:

  • 1/4 Extra Virgin Olive Oil
  • 1 BIG Tablespoon Dijon Mustard
  • 6 Tablespoon Red Wine Vinegar 
  • Cracked Salt and Pepper

Directions:

In a glass measuring cup add the extra virgin olive oil the red wine vinegar and last add the dijon mustard to the mix. Stir with whisk until creamy smooth. Add cracked pepper and salt to the finishing mix

My Meal Plan




A perfect example of how your diet should be daily is posted above! If you want to get lean and toned physique, it all begins in the kitchen! Clean eating and balancing your meals should be your top priority. I start with a bowl of steel cut oatmeal with a couple of boiled eggs for my protein and fat. For my snack a couple hours later ill eat some fruit, nuts and a couple of boiled eggs. Lunch is brown rice, lean chicken and a salad with a homemade vinaigrette dressing:)   I'll skip the complex carbohydrates for dinner and typically indulge in yummy vegetables, salad and salmon for some good protein.  This is just an example of meal/snacks consumed in a day. However, my diet is rich in a variety of vegetables, fruits and lean meats that are balanced portions. Don't over think your diet and basically consume  healthy and nutritious foods to maintain your energy throughout the day! Stay motivated and continue to think positive about your self and your body!

Tips: Eggs are the best and most cost efficient protein you can find! Eat the whole egg, not just the whites

Tomato Cucumber Feta Cheese Salad


Tomato, Cucumber, Feta Cheese Salad 

This is such a yummy salad that is perfect for the summer and a completely healthy addition to a meal!

Ingredients:


  • 2 tablespoons minced parsley
  • 1 cucumber 
  • 2 tablespoon red onion
  • cracked pepper and sea salt
  • 2 tablespoons olive oil
  • 1 tablespoon red vinegar 
  • 3 oz feta cheese
  • 1 1/2 cups sliced red and yellow cherry tomato

Pregnancy

Oh pregnancy, how much fun it is when you're hitting your last month.  Your feet are swollen, hips are so wide that you have to wear yoga pants everyday, and not to mention, your husband shirts fit better on you than on him.  Forget about caring about what you look like in public, because all I cared about was how comfortable I felt at the moment (hint my picture below hehe).

During my pregnancy, I pretty much ate whatever I wanted and immediately put on 30 pounds. It wasn't until 24 weeks into my pregnancy that I found out I had Gestational Diabetes! You know those sugary drinks that the GYNO makes you drink in the middle of your pregnancy. Well yeah, I completely failed that test!! (Hearing that my blood glucose levels were above normal put me in complete despair).  Whats does this mean? Is this going to affect the health of my baby? Am I going to die?  I really thought it was the end of my world considering I had been a complete fitness fanatic my whole life. My diet has always been very healthy and I don't consume harmful substances like alcohol and tobacco. In the end, I just accepted the fact that I had "GB" and  decided to move forward with keeping myself and my baby as healthy as possible.

 Gestational Diabetes meant my chances of getting diabetes after my pregnancy is much higher than the normal mother.  SO if you are wondering what motivates me to stay fit and workout, well now you know why.  Nobody wants DIABETES :(.  Did you know, in the United States alone, 29 million people have diabetes and 1 out of 9 people will develop diabetes in their lifetime. So don't be part of the statisic and start now to be healthy instead of later!!
